8x10 doesn't have to be slow to "load/unload", shooting is another thing!!
it takes me few seconds to load unload an 8x10 film holder from/into the
camera but I have used exposures as long as 55 minutes when using B&W paper.
You could build a light tight box around an 8x10 back (if you find a cheap
one in eBay or somewhere else) like I did with this one:

Or you could build an 8x10 camera similar to the Bender one. Here are some
images of a very rustic one I made with scrap wood, some screws, some
carpentry glue and a hand saw, it is a 4x5, but an 8x10 has similar
construction, similar can be done with other materials (foamcore):
