I shoot 4x5 transparency film with a Zero Image pinhole camera, and have
no problem at all printing most images at 16x20. I scan with an Epson
4870. I have found that some images don't work when they are taken up
to that size, but it's not because of the uprez of the scan, it's
because some things that look nice at smaller sizes doesn't look nice at
larger sizes. Mostly areas where there's a boundary between lightest
and darkest colors - in some cases it just doesn't look right. (In most
cases it does.)
I find no problem with softness. In fact the Zero Image produces images
with so much crisp detail that I often put in some softness in
post-processing.
