Hi Tom,
I generally work with Ilford paper, RC or Fiber, either Pearl or Matte. I find that Ilford Fiber Matte gives me very interesting paper negatives but it does not work all the time, since the matte surface tend to remove some of the impact from the image.
For my last room-turned-pinhole project I used Ilford Fiber WarmTone DoubleWeight Glossy paper and got excellent results with it. I bought a roll that was 50" X 100 feet (if I recall correctly). Exposure time on bright sunny day was about 3 1/2 hours (half of which spent dodging the center area with a huge dodging tool to get even exposure).
I've built a couple 20"x24" pinhole cameras, one using black foamcore, the other using 1/4" plywood. The trick is to find a good way to keep the paper firmly in place without loosing too much edge area. With these cameras, I always use fiber paper, since I make one-only paper negatives intended for gallery exhibition and sale.
I also use Forte Fiber Warmtone DW Pearl and Luminos Fiber Charcoal for projects involving the Lith-Printing process, a process where the paper is overexposed by 3-4 stops (8 to 16 times the standard exposure) and subsequently developped in highly diluted Kodak A+B Lithographic developer for about 8 to 10 minutes. The results are wonderful, but this is a tricky process.
