I haven't used 35mm for pinhole, but I have found that a zone plate in a
body cap works very well (for me, at least). The zone plate image is
bright enough that the SLR viewfinder works well enough to allow for
composing the shot. (The image IS dark in the viewfinder, and blocking
light from entering the eyepiece is essential for viewing, but it does
work on a sunny day.) And the TTL light meter of my Nikon EF (which is
apperature-priority) gets the exposure right every time. With 800 speed
film I can hand hold the shots without difficulty.

Having said that, by all means convert a Holga; the camera is cheap, and
the conversion is easy. You might also want to consider converting an
old TLR -- you'll have fewer light leaks than with a Holga, and the
reflex viewer will be a pretty good match to what the pinhole will put
on film.
