Hi Benjamin & David,
I have turned several 600 and sx-70 cameras into pinhole cameras. I had
posted this to the list probably a year ago when I first did it, but here's
a page on my site with some info:

l
It's not really a how-to, but it has some examples. Since I did that page, I
have done a lot more experimenting. You can see more examples here (it's a
page about a workshop I teach on the subject)

To answer some of Benjamin's questions--I use the auto exposure, so I'm a
little limited to the lighting conditions. But, I also use the flash on it!
If you alter it so the button keeps the shutter open, keep in mind the
camera will need to eject the picture to start the chemical process of
development. What if you use a simple box with a pinhole, put the pack of
600 film in it, expose it, then put it back in the camera to eject/process?
You'll need a changing bag/darkroom though.

I'm actually writing a how-to article for an Artzine I publish called "Tub
legs" on turning a 600 polaroid camera into a pinhole camera! It's really
pretty easy to do if you are going the auto-exposure route.
