Shannon,

Take a look at this page for an old shutter that I use
with a couple of the view cameras I use...

You can use any old shutter that has either a "B"
(bulb) or "T" (time) setting for the long exposures
needed. I've used old Kodak shutters from folding
cameras I've picked up for a couple of bucks. Unscrew
the lens elements & insert your pinhole.
