Hello Beau,
Check out the Pinhole Day resource page. It is probably the best
pinhole reference site out there, being both compact and high quality.
Stewart Woodruff's site is geared toward children. The workshop
resource page has a couple of links that are by and for teachers.

I've always used Ilford Multigrade III RC matte surface developed in
Dektol with good success. This paper has been discontinued (although
it still come up on eBay). Others on the list will likely have more
up to date recommendations.
Thanks,
Tom Miller
