With large format you can develop each image individually. This means that if
you want to bracket, you can extend or contract the development to fit the
exposure time.

I don't know of any real pitfalls (I made a pinhole lenscap for my Nikon). You
will need to more carefully select your subject. As the image will not be as
clear as when a larger format is used, you will not be able to include as much
detail in the image. For instance, you can see the detail in my image at
http://www.pinholeday.org/exhibition/index.php?formName=EXHIBIT&f_action=request&f_rec=154&f_fieldName=date_added&f_fieldData=2001-05-08+15%3A44%3A40&f_newrec=154&goprev.x=3&goprev.y=7,
which was made with an 8X10" pinhole camera. the 35mm version would just be a
messy mishmash, so this particular subject would "probably" not be suitable for
that format.
