Ed,
I'm wondering about your goal with this project. If you want an image as sharp as a lens, why not just use a lens? Wouldn't that achieve your goal in the easiest way? Or are you choosing a pinhole rather than a lens for a greater depth of field? Would a wide angle lens with a greater depth of field serve your purpose? What about a lens from one of the millions of "spy" cameras advertised all over the internet? Would that give you what you want?
A pinhole is not going to give you the sharpness of a lens. Pinhole images have their own special advantages and can provide unique, special results, and can even be rather sharp if that's what someone wants, but not as sharp as a lens. If sharpness is important for your project, I doubt you will be satisfied with the results. Of course, if you're going for a more ethereal, dreamy atmosphere and mood, you might be pleasantly surprised with the results.
