Why so much

HI all,

I've been reading the archive a bit and I was surprise by the amount of
gelatine some of you used. On a pouches of Knox it's written "This envelope is
pre-mesured to set 2 cups (500ml) of liquid." I ask myself why do they use so
much ( ~6-7 times+)??? And I decided to ask instead of trying to figure it
out.
